3 lg garlic cloves, crushed
1 tsp dried rosemary (1 tbsp if fresh herb)
½ tsp dried thyme
Salt and pepper to taste
2 tbsps. extra virgin olive oil
4 lamb chops, about 1inch thick
Combine spices in with olive oil until it makes a paste. Rub paste on both sides of the chops and marinate in the fridge for a least an hour.
Before cooking, make sure chops are at room temperature (this takes about 20-30min)
Fire up the grill and sear chops for about 2 min. flip the chops over and cook for another 3 ½ min for medium, 3 min for medium rare.
